  • 12 ounces (340 grams) dried figs, chopped into small pieces (or 1 pound fresh figs, quartered)
  • 1/4 cup (60 ml) good-quality balsamic vinegar
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (120 ml) water
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 1/4 teaspoon ground cinnamon (optional)
  • A pinch of salt

Instructions

  1. Chop the figs into small, roughly 1/4-inch pieces (if using fresh figs, quarter them).
  2. Combine chopped figs, water, granulated sugar, balsamic vinegar, lemon juice, ground cinnamon (if using), and salt in a medium-sized heavy-bottomed saucepan. Stir to combine.
  3. Set the pan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent burning, about 7-10 minutes.
  4. Lower the heat to low and cook uncovered, stirring every few minutes, until the jam thickens and darkens, about 15-20 minutes.
  5. Test the jam by running a spoon across the bottom of the pan; if it holds its shape and doesn’t run back together immediately, it’s ready. If too liquid, cook a few minutes longer.
  6. Remove from heat and let cool slightly before transferring to clean glass jars. Store in the refrigerator and use within 2 weeks.

Stir frequently to prevent burning and ensure even cooking. Use low heat and be patient for best texture and flavor. Fresh lemon juice brightens the jam. Store in airtight jars in the fridge for up to two weeks or freeze for longer storage. Reheat gently with a splash of water if jam firms up.
