Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F-115°F), sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, 1 teaspoon salt, and 3 ½ cups flour to the yeast mixture. Stir until a shaggy dough forms. Turn onto a lightly floured surface and knead for 5-7 minutes, adding remaining ½ cup flour as needed until dough is smooth, soft, and slightly tacky.
  3. Let it rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for 20-30 minutes until puffed.
  4. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. In a large pot, bring 10 cups water to a boil, then carefully add ⅔ cup baking soda (it will fizz). Reduce heat to a gentle simmer.
  5. Shape the bites: Punch down dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 20-24 per rope, 80-96 total).
  6. Boil the bites: Working in batches of 8-10, drop bites into simmering baking soda water for 20-30 seconds until they float. Remove with a slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  7. Egg wash and salt: Brush each bite with egg wash (beaten egg + water). Sprinkle generously with coarse sea salt or pretzel salt.
  8. Bake: Bake for 12-15 minutes until deep golden brown and puffed, rotating the sheet halfway through.
  9. Make the dip: While bites bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute.
