Easy Candy Corn Blondies with White Chocolate Chips

These buttery, chewy blondies are packed with candy corn and white chocolate chips for a quick and easy fall treat. Perfect for when a sweet craving hits, this one-bowl recipe comes together in minutes and is a guaranteed crowd-pleaser.

  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (180g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (about 150g) candy corn
  • ½ cup (90g) white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and resembles wet sand. Let sit for 1 minute.
  3. Whisk in the egg and vanilla extract until well combined and glossy. Ensure melted butter is not too hot to avoid scrambling the egg.
  4. In a separate small bowl, whisk together flour, baking powder, and salt.
  5. Pour dry ingredients into wet mixture. Fold gently with a rubber spatula until just combined and no streaks of flour remain. Do not overmix.
  6. Gently fold in candy corn and white chocolate chips, reserving a handful of each for topping.
  7. Scoop batter into prepared pan and spread evenly into corners. Use slightly wet fingers to press the batter flat.
  8. Press reserved candy corn and white chocolate chips into the top of the batter.
  9. Bake for 22-26 minutes, until edges are golden brown and set, and center looks slightly underdone and puffy. A toothpick inserted near the center should come out with a few moist crumbs.
  10. Cool completely in the pan on a cooling rack. Once cool, use parchment overhang to lift the slab out. Cut into 16 squares with a sharp knife.

Notes

Use fresh candy corn for best chew; stale candy corn becomes hard. Do not overbake—blondies continue to cook from residual heat. For best results, let blondies cool completely before cutting to prevent crumbling. Blondies taste even better the next day as flavors meld.
