  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar

  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) whole milk (or almond/oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced (about 1 1/2 cups or 200g)
  • For the oat topping:
  • 1/2 cup (45g) rolled oats
  • 1/4 cup (50g) brown sugar
  • 3 tablespoons (43g) unsalted butter, cold and cubed
  • 1 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line or grease a 12-cup muffin tin.
  2. Prepare the oat topping: In a small bowl, combine 1/2 cup rolled oats, 1/4 cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Add 3 tablespoons cold, cubed butter and mix with fingers or a pastry cutter until coarse crumbs form. Chill in the fridge.
  3. Mix dry ingredients: In a large bowl, whisk together 2 cups all-purpose flour, 3/4 cup granulated sugar, 2 teaspoons baking powder, 2 teaspoons cinnamon, and 1/2 teaspoon salt.
  4. Combine wet ingredients: In another bowl, beat 2 large eggs until smooth. Add 1/2 cup melted butter, 1/2 cup whole milk, and 1 teaspoon vanilla extract. Whisk until blended.
  5. Fold wet ingredients into dry ingredients gently with a spatula until just combined; a few lumps are okay.
  6. Fold in the diced apples evenly.
  7. Spoon batter into muffin cups, filling each about 3/4 full.
  8. Generously sprinkle the oat crumble topping over each muffin.
  9. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean and the topping is golden brown.
  10. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
