Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large bowl, beat 1 cup softened unsalted butter and 3/4 cup granulated sugar together using an electric mixer on medium speed for 3-4 minutes until light, fluffy, and pale yellow.
  3. Add 1 large egg and 1 1/2 teaspoons pure vanilla extract to the butter mixture. Beat until fully combined, scraping down the sides of the bowl.
  4. In a separate bowl, whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Gradually add the flour mixture to the butter mixture in three additions, mixing on low speed or folding gently with a spatula to avoid overworking the dough.
  6. Gently fold in 3/4 cup rainbow confetti sprinkles, being careful not to overmix.
  7. Transfer the dough into the prepared pan and spread evenly with a spatula, dampening the spatula slightly to smooth the surface.
  8. Bake for 25-28 minutes until edges are lightly golden and the center looks set but still soft.
  9. Cool completely in the pan on a wire rack for at least 30 minutes. Use the parchment overhang to lift the bars out and slice into squares or rectangles.
  10. If bars feel too soft when cutting, chill in the fridge for 10-15 minutes before slicing. Use a sharp serrated knife for clean cuts.
