This easy crockpot buffalo ranch chicken dip is the perfect game day appetizer—creamy, tangy, and spicy with a perfect balance of ranch and buffalo sauce. Just dump everything in the slow cooker and let it work its magic for a crowd-pleasing dip that disappears before halftime.

Ingredients

Scale
  • 2 (12.5 oz) cans of chunk chicken breast, drained (or 3 cups shredded rotisserie chicken)
  • 16 oz cream cheese, softened and cut into cubes
  • 1 cup buffalo wing sauce (such as Frank’s RedHot)
  • 1 (1 oz) packet of dry ranch dressing mix (such as Hidden Valley)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup milk or half-and-half
  • Optional toppings: sliced green onions, crumbled blue cheese, extra buffalo sauce drizzle, or chopped fresh chives

Instructions

  1. Prep your cream cheese: Take the cream cheese out of the fridge about 30 minutes before you start. Cut it into small cubes to help it melt faster and more evenly. If you forget, microwave it for 15-20 seconds to soften.
  2. Drain the chicken: Open both cans of chunk chicken breast and drain off the liquid. Use a fork to shred the chicken into smaller pieces right in the can or in a small bowl. You want it fine enough to blend into the dip but with a few chunks left for texture.
  3. Layer it in the crockpot: Add the shredded chicken to your slow cooker. Drop in the cubed cream cheese. Pour the buffalo wing sauce over everything. Sprinkle the dry ranch dressing mix on top. Add the shredded cheddar and mozzarella cheeses. Finally, pour in the milk or half-and-half.
  4. Stir it all together: Give everything a good stir until the cream cheese and sauces start to combine. Don’t worry if it looks clumpy at this stage—the heat will work its magic. Just do your best to coat the chicken and cheese evenly.
  5. Cook on low: Set your slow cooker to low and let it cook for 2 to 2.5 hours. Stir the dip every 30 minutes if you can. This helps everything melt together more evenly and prevents any scorching on the edges. The dip is ready when the cream cheese is completely melted and the mixture is smooth and bubbly.
  6. Adjust the consistency: After 2 hours, check the dip. If it looks too thick, stir in an extra tablespoon of milk at a time until it reaches your desired consistency. If it’s too thin, let it cook uncovered for another 15-20 minutes to thicken up.
  7. Taste and adjust: Give it a taste test. Need more heat? Add another splash of buffalo sauce. Want it creamier? Stir in a little extra cream cheese. This is your dip—make it exactly how you like it.
  8. Add toppings and serve: Once the dip is smooth and heated through, transfer the slow cooker to the ‘warm’ setting. Sprinkle sliced green onions or crumbled blue cheese on top for a fresh finish. Serve immediately with your favorite dippers.

Notes

Don’t skip softening the cream cheese—cold cream cheese takes forever to melt and will leave lumps. Stir every 30 minutes for the best texture. Use Frank’s RedHot buffalo sauce for the best balance of tang and heat. Shred your own cheese from a block for smoother melting. Keep the dip on the ‘warm’ setting during serving. If making ahead, assemble in the slow cooker insert and refrigerate overnight, then add 15-20 minutes to cooking time.
