These easy crockpot chicken meal prep bowls are the perfect solution for busy weeks, featuring tender, juicy shredded chicken with vegetables and rice, all made with minimal effort.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (about 4 medium)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 3 cups cooked rice (brown, white, or quinoa)
  • 3 cups mixed vegetables (e.g., frozen broccoli florets and sliced bell peppers)
  • Optional: Greek yogurt, lemon juice, garlic powder for sauce

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and a pinch of smoked paprika. Sear for 3-4 minutes per side until golden brown.
  2. Place diced onion and minced garlic in the bottom of a 6-quart slow cooker. Nestle browned chicken breasts on top.
  3. Pour chicken broth around the chicken (not directly on top). Sprinkle dried oregano and remaining smoked paprika over the chicken. Do not stir.
  4. Cook on low for 4-5 hours or high for 2.5-3 hours, until chicken reaches an internal temperature of 165°F and is tender.
  5. Remove chicken from crockpot and let rest for 5 minutes. Shred using two forks or a hand mixer.
  6. Return shredded chicken to crockpot, stir with onions and broth, and let sit on warm for 10-15 minutes. Adjust seasoning to taste.
  7. Steam or roast vegetables until just tender (e.g., microwave frozen broccoli for 3-4 minutes or roast fresh bell peppers at 400°F for 15 minutes).
  8. Divide cooked rice among 5 meal prep containers. Top each with shredded chicken and vegetables. Optionally, drizzle with yogurt sauce or pack separately.
  9. Let bowls cool completely before sealing lids. Refrigerate for up to 4-5 days.

Notes

Browning the chicken is key for flavor; don’t skip it. Let chicken rest before shredding to retain juices. For best texture, layer rice on bottom, then chicken, then vegetables. Bowls taste even better on day 2-3.
