This crockpot taco soup with ranch seasoning is the ultimate one-pot meal—hearty, tangy, and incredibly easy. Just brown the meat, dump everything in, and let your slow cooker work its magic for a comforting dinner that tastes like it simmered all day.

Ingredients

Scale
  • 1 pound ground beef (85/20 recommended)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 can (15 ounces) diced tomatoes with green chiles (undrained)
  • 1 can (15 ounces) fire-roasted diced tomatoes (undrained)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (10 ounces) enchilada sauce
  • 2 cups beef broth (low-sodium recommended)
  • Shredded cheddar cheese (for topping)
  • Sour cream (for topping)
  • Fresh cilantro, chopped (for topping)
  • Crushed tortilla chips (for topping)
  • Diced avocado (for topping)
  • Sliced jalapeños (for topping)
  • Lime wedges (for topping)

Instructions

  1. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking up the meat, until browned and onion is soft (6-8 minutes). Drain excess fat if needed.
  2. Add the garlic: Stir in minced garlic and cook for 1 minute until fragrant.
  3. Transfer to slow cooker: Scoop the beef mixture into a 6-quart slow cooker.
  4. Add seasonings: Sprinkle taco seasoning and ranch seasoning over the meat and stir to coat.
  5. Add canned goods: Add diced tomatoes with green chiles (undrained), fire-roasted tomatoes (undrained), black beans, pinto beans, corn, and enchilada sauce. Do not drain the tomatoes.
  6. Pour in broth: Add beef broth and stir everything together well.
  7. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  8. Taste and adjust: About 30 minutes before serving, taste and adjust seasoning if needed (add salt, cayenne, or hot sauce to taste).
  9. Serve: Ladle into bowls and top with cheese, sour cream, cilantro, crushed tortilla chips, avocado, jalapeños, and lime wedges as desired.

Notes

Brown the meat first for best flavor. Do not overfill the slow cooker (no more than 3/4 full). Resist lifting the lid during cooking. For thicker soup, mash some beans against the side of the slow cooker. Leftovers taste even better the next day. Freezes well for up to 3 months.
