Easy Crockpot Vegetable Soup Recipe – Best Set-and-Forget

A hearty, set-and-forget vegetable soup made in the crockpot with simple, wholesome ingredients. Perfect for meal prep and packed with flavor from slow cooking.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 2 medium russet potatoes, peeled and cubed into 1-inch pieces
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups vegetable broth, low-sodium
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 4–5 minutes until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. While onions cook, dice carrots, celery, potatoes, and zucchini. Trim and cut green beans. Open can of tomatoes.
  3. Layer sautéed onions and garlic at the bottom of a 6-quart crockpot. Add carrots, celery, potatoes, zucchini, green beans, corn, and diced tomatoes with their juices.
  4. Pour vegetable broth over vegetables. Add tomato paste, dried thyme, smoked paprika, bay leaves, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until potatoes are fork-tender.
  6. About 10 minutes before serving, stir in frozen peas. Let them warm through.
  7. Remove bay leaves. Taste and adjust salt and pepper as needed. Ladle into bowls and garnish with fresh parsley.

Notes

Sautéing the onions and garlic first deepens the flavor. Cut vegetables uniformly for even cooking. Layer dense vegetables (carrots, potatoes) at the bottom and softer ones (zucchini, peas) on top. Avoid lifting the lid during cooking. Season at the end to avoid oversalting. For a thicker soup, mash some potatoes against the side of the crockpot before serving. This soup freezes well for up to 3 months.
