A hearty, crustless breakfast casserole with savory sausage, sweet bell peppers, and gooey cheddar cheese. Perfect for busy mornings, meal prep, or holiday brunches—this gluten-free dish comes together in under 45 minutes with simple ingredients.

Ingredients

Scale
  • 1 lb (450g) breakfast sausage (bulk, not links)
  • 10 large eggs (or 8 extra-large)
  • 1 cup (240ml) whole milk (or 2%, half-and-half, or unsweetened almond milk)
  • 2 cups (200g) shredded sharp cheddar cheese (divided)
  • 2 medium bell peppers (any color; red and green recommended)
  • 1 medium yellow onion
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2g) black pepper (freshly ground preferred)
  • ½ teaspoon (2g) garlic powder
  • Optional: 1 cup chopped mushrooms, handful fresh spinach, diced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C). Place a 9×13-inch baking dish on the middle rack to warm.
  2. Cook the sausage: In a large skillet over medium-high heat, cook breakfast sausage, breaking it apart, for 5-7 minutes until browned. Transfer to a paper towel-lined plate; reserve some fat in the skillet.
  3. Sauté vegetables: In the same skillet, cook diced onion and bell peppers over medium heat for 5-6 minutes until onions are translucent and peppers softened. Season with a pinch of salt and pepper.
  4. Whisk eggs: In a large bowl, whisk eggs, milk, salt, black pepper, and garlic powder for about 30 seconds until smooth and slightly frothy.
  5. Layer casserole: Spread cooked sausage evenly in the greased baking dish. Top with sautéed peppers and onions. Sprinkle 1½ cups shredded cheddar over the top.
  6. Pour egg mixture: Slowly pour the egg mixture over the layers, tilting the dish to distribute evenly. Most solids should be submerged.
  7. Top with remaining cheese: Sprinkle remaining ½ cup cheddar over the top.
  8. Bake: Place dish in oven and bake for 30-35 minutes, until edges are set and golden, and center is just slightly jiggly. A knife inserted in center should come out clean or with a few moist crumbs.
  9. Rest: Remove from oven and let rest 5-10 minutes before slicing. This allows eggs to finish setting.
  10. Slice and serve: Cut into squares and serve warm. Garnish with fresh chives, parsley, or red pepper flakes if desired.

Notes

For extra color on top, broil for the last 1-2 minutes, watching carefully. Let sausage cool slightly before layering to avoid uneven cooking. Use room temperature ingredients for best results. Start checking doneness at 25 minutes; slightly underbaked is better than overbaked. Resting is crucial for clean slices.
