Ingredients

  • Bone-in spiral sliced ham (7-8 pounds / 3.2-3.6 kg)
  • Brown sugar (½ cup / 100g)
  • Dijon mustard (¼ cup / 60ml)
  • Pineapple juice (½ cup / 120ml)
  • Honey (⅓ cup / 113g)
  • Whole cloves (about 20)

Instructions

  1. Preheat your oven to 325°F (163°C). Remove the ham from its packaging and pat it dry with paper towels. Trim the fat layer to about ¼ inch if needed. Place the ham on the roasting rack in your pan, cut side down.
  2. In a small saucepan, combine brown sugar, Dijon mustard, pineapple juice, and honey. Stir over medium heat until sugar dissolves and mixture bubbles gently. Remove from heat immediately.
  3. Using a toothpick or small knife, poke into the ham’s surface at regular intervals and insert whole cloves evenly spaced (about 20 cloves).
  4. Brush a generous layer of glaze all over the ham, including between spiral slices. Cover loosely with aluminum foil and roast for 1 hour 15 minutes. Remove foil, brush another layer of glaze, and roast uncovered for 15 more minutes until glaze is caramelized and ham is heated through.
  5. Remove ham from oven and tent loosely with foil. Let rest for at least 10 minutes before slicing and serving.

Notes

Use a meat thermometer to ensure the ham reaches 140°F internal temperature for juicy meat. Glaze twice during roasting for best caramelization. Let the ham rest before slicing to lock in juices. Save pan drippings for gravy or drizzling over sides.
