These warm, flaky puff pastry bites are filled with creamy melted brie and tart cranberry sauce, making them the perfect quick and easy appetizer for any fall gathering. Ready in just 25 minutes with simple ingredients, they’re a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 8 ounces brie cheese, rind removed and cut into 1-inch cubes
  • ½ cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water
  • Fresh rosemary or thyme for garnish (optional)
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Cut the pastry into 9 equal squares, about 3 inches each.
  3. Remove the rind from the brie using a sharp knife. Cut the brie into 1-inch cubes (about 9 pieces).
  4. Place one brie cube in the center of each pastry square. Top each with about 1 tablespoon of cranberry sauce.
  5. Bring the four corners of each pastry square together over the filling and pinch to seal, creating little parcels.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Brush the top and sides of each pastry parcel with the egg wash.
  7. Place the assembled bites on the prepared baking sheet, leaving about 2 inches of space between each one. Bake for 15-18 minutes, or until the pastry is puffed and golden brown.
  8. Let the bites cool on the baking sheet for 5 minutes before transferring to a serving platter. Sprinkle with flaky sea salt and fresh rosemary or thyme while still warm.

Notes

Thaw puff pastry in the refrigerator overnight for best results. Work quickly with cold pastry. If pastry tears while folding, patch with a small piece of extra pastry. For a golden finish, don’t skip the egg wash. Let bites cool for 5 minutes before serving to avoid burning your mouth on the hot cheese. Can be assembled and refrigerated up to 24 hours before baking, or frozen unbaked for up to 3 months.
