Creamy overnight oats with peanut butter, banana, and a hint of cinnamon—a quick, no-cook breakfast that tastes like fall in a jar. Perfect for busy mornings when you need something delicious waiting for you.

Ingredients

Scale
  • 1/2 cup (45g) rolled oats
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk (any kind)
  • 1 tablespoon (15ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional toppings: sliced banana, chopped peanuts, extra peanut butter drizzle, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in a jar or small bowl with a fork until mostly smooth.
  2. Add the peanut butter and mash together with the banana until well combined.
  3. Pour in the milk and stir until the banana-peanut butter mixture is mostly incorporated.
  4. Stir in the rolled oats, chia seeds, cinnamon, salt, and maple syrup until everything is well combined. The oats should be fully submerged; add another tablespoon of milk if needed.
  5. Seal the jar or cover the bowl tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk to loosen.
  7. Add desired toppings (sliced banana, peanut butter drizzle, cinnamon, chopped peanuts, etc.) and enjoy cold or microwave for 45-60 seconds for warm oats.

Notes

For meal prep, double or triple the recipe and portion into individual jars. They keep in the fridge for up to 4 days. Leave toppings off until ready to eat to avoid sogginess. If you forget to make them the night before, let them sit at room temperature for about 2 hours for a quick version.
