  • 1 tablespoon maple syrup (plus more to taste)

  • 1/2 teaspoon vanilla extract
  • 1 cup strong brewed coffee (dark roast or cold brew), cooled slightly
  • Ice (a handful, if serving cold)

Instructions

  1. Brew your coffee: Start with 1 cup of strong coffee. Use a dark roast brewed double-strength so the coffee flavor holds up against the sweet, creamy foam. Let it cool for a minute or two while you make the foam. If making iced coffee, let it cool completely or use cold brew.
  2. Combine the foam ingredients: In a small bowl or jar, add 1/4 cup cold heavy cream, 2 tablespoons pumpkin puree, 2 tablespoons milk, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla extract. Make sure the cream is very cold.
  3. Froth until thick: Using a handheld frother, blend the mixture until it becomes thick and creamy, about 30-45 seconds. The consistency should be similar to melted soft-serve ice cream. Do not over-froth.
  4. Fill your glass with ice: If making iced coffee, fill a tall glass with ice cubes. For hot coffee, skip this step and use a warm mug instead.
  5. Pour the coffee: Pour your brewed coffee over the ice, leaving about an inch of space at the top for the foam.
  6. Spoon the foam on top: Gently spoon the pumpkin cream cold foam over the back of a spoon onto the coffee to help it float on top.
