  • Ripe peaches (firm but ripe)
  • 2 tablespoons fresh lemon juice
  • 1 cup cold water
  • 1 to 2 tablespoons granulated sugar (optional)

Instructions

  1. Wash and dry peaches thoroughly.
  2. Peel peaches using a sharp paring knife or vegetable peeler. Alternatively, blanch peaches in boiling water for 30 seconds and plunge into ice water to loosen skin.
  3. Slice peaches in half, remove pits, and cut into 1/2 inch thick wedges.
  4. Prepare lemon juice soak by mixing 1 cup cold water with 2 tablespoons fresh lemon juice in a large bowl.
  5. Soak peach slices in lemon water for 10 minutes to prevent browning.
  6. Drain and gently pat peach slices dry with paper towels.
  7. Optionally sprinkle 1 to 2 tablespoons granulated sugar over slices and toss lightly to coat.
  8. Arrange peach slices in a single layer on a parchment-lined baking sheet and flash freeze for about 2 hours until firm.
  9. Transfer frozen peach slices into freezer-safe zip-top bags or airtight containers, pressing out air to prevent freezer burn. Label with date.

Notes

Do not freeze peaches whole or in large chunks to avoid mushiness. Lemon juice soak is essential to prevent browning and preserve flavor. Flash freezing in a single layer prevents slices from sticking together. Thaw peaches slowly in the refrigerator for best texture. Sugar is optional and can be replaced with coconut sugar or omitted for sugar-free version. Peaches can also be pureed and frozen in ice cube trays for smoothies.
