  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1/4 cup maple sugar (optional)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together pumpkin puree, maple syrup, milk, eggs, and vanilla extract until smooth.
  3. Add cinnamon, nutmeg, ginger, and salt. Whisk until fully combined. The mixture should be smooth and slightly thick.
  4. Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
  5. Sprinkle the dry cake mix evenly over the pumpkin layer. Do not stir or pat down.
  6. Drizzle the melted butter evenly over the dry cake mix. If using, sprinkle maple sugar and pecans on top.
  7. Bake for 40-45 minutes, or until the top is golden brown and the edges are bubbly. The center should be set but slightly jiggly. If browning too quickly, tent with foil for the last 10 minutes.
  8. Let the cake cool on a wire rack for at least 15-20 minutes before serving. Serve warm or at room temperature.

Notes

For best results, use 100% pure pumpkin puree (not pumpkin pie filling) and real maple syrup. Let the cake rest for 15-20 minutes before serving to allow it to set. Store leftovers in an airtight container in the refrigerator for up to 5 days. The cake can be frozen for up to 3 months.
