This Easy No-Bake S’mores Icebox Cake for Labor Day delivers all the gooey, nostalgic magic of a campfire s’more without turning on the oven. Layers of crunchy graham crackers, silky chocolate mousse-like filling, and a toasted marshmallow top come together in the fridge for a cool, creamy, and unforgettable dessert.

  • 1 full box (about 1416 sheets) graham crackers
  • 2 boxes (3.9 ounces each) instant chocolate pudding mix
  • 3 cups whole milk
  • 8 ounces Cool Whip or homemade whipped cream (thawed)
  • 2 cups mini marshmallows
  • 1520 large marshmallows
  • 4 ounces milk chocolate bar, finely chopped
  • 2 tablespoons unsalted butter, melted (optional)
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, whisk together the two boxes of instant chocolate pudding mix and 3 cups of whole milk for about 2 minutes until it starts to thicken.
  2. Add the thawed Cool Whip (or homemade whipped cream) to the pudding and gently fold together until no white streaks remain.
  3. Gently fold in 1 cup of mini marshmallows and the chopped milk chocolate. Set aside.
  4. Arrange a single layer of graham crackers in the bottom of a 9×13-inch baking dish, breaking them as needed to fit snugly. Optionally, brush each cracker lightly with melted butter.
  5. Spread about one-third of the pudding mixture evenly over the graham crackers.
  6. Repeat layers: add another layer of graham crackers, then another third of the filling. Repeat once more, ending with a final layer of graham crackers on top (three layers of graham crackers and three layers of filling).
  7. Halve the large marshmallows crosswise and arrange them in a single layer over the top graham crackers, cut-side down. Press gently.
  8. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  9. Just before serving, use a kitchen torch to toast the marshmallow tops until golden and bubbly. Alternatively, broil for 1-2 minutes, watching carefully. Sprinkle with a pinch of sea salt.
  10. Let the cake sit at room temperature for about 10 minutes before slicing. Use a sharp knife and wipe it clean between cuts for neat slices.

Notes

For best results, chill overnight. If using a sturdy brand of graham crackers, let chill for a full 12 hours. Do not overmix the pudding and whipped cream. If using the broiler, keep the dish cold before toasting. This cake can be frozen for up to 2 months (thaw overnight in fridge before serving, and torch marshmallows just before serving).
