This one-bowl banana bread with walnuts is simple, forgiving, and absolutely delicious. The walnuts add a wonderful crunch, and the one-bowl cleanup means you’re not staring at a mountain of dishes afterward.

Ingredients

Scale
  • 3 ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (60g) chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan or line it with parchment paper, leaving some overhang on the long sides.
  2. In your large mixing bowl, mash the bananas with a fork or potato masher until they’re as smooth or chunky as you like.
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the bowl. Stir everything together until well combined.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently, just until the flour is incorporated.
  5. Add the chopped walnuts and fold them in with a few gentle strokes.
  6. Scrape the batter into your prepared loaf pan and spread it evenly. Give the pan a gentle tap on the counter to release any air bubbles.
  7. Bake for 55-65 minutes. Start checking at 50 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes. Then lift it out using the parchment paper overhang and transfer it to a cooling rack. Let it cool completely before slicing.

Notes

Don’t overmix the batter. Use room temperature ingredients. Toast the walnuts first for better flavor. Check for doneness with a thermometer (internal temperature should be around 200-205°F). Let it cool completely before slicing.
