  • 1/2 cup shredded carrots
  • 1/2 cup finely shredded red cabbage
  • 1/2 cup thinly sliced yellow bell pepper
  • 1/2 cup fresh baby spinach leaves, stems removed
  • 1/4 cup finely diced cucumber, seeds removed

Instructions

  1. Make the ranch spread: In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. If using fresh dill and chives, fold them in at the end. The mixture should be spreadable but not runny. If it seems too thick, add a teaspoon of milk.
  2. Prepare the veggies: While the cream cheese softens, prep all your vegetables. Shred the carrots finely. Shred the red cabbage. Slice the yellow bell pepper into thin strips, then chop into small pieces. Pat the spinach leaves completely dry with paper towels. Dice the cucumber after removing the seeds. Lay all your prepped veggies out on a plate in separate piles.
  3. Assemble the first tortilla: Lay one large flour tortilla flat on your cutting board. Using an offset spatula or the back of a spoon, spread about 3 tablespoons of the ranch mixture evenly over the entire surface of the tortilla, going all the way to the edges. The layer should be thin but complete, about 1/8 inch thick.
  4. Layer the rainbow: Working in horizontal stripes across the tortilla, create your rainbow layers.   5. Roll it tight: Starting from the edge with the first veggie stripe (the purple cabbage), begin rolling the tortilla tightly. Use your fingers to hold the filling in place as you roll.
