  • 1/4 cup water (60 ml)

  • 1 tablespoon olive oil (15 ml)
  • Optional: red pepper flakes or freshly ground black pepper for heat

Instructions

  1. Lightly coat the chicken breasts with olive oil and season with a pinch of salt and pepper. (5 minutes)
  2. In a mixing bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and water until well combined. (5 minutes)
  3. Place the oiled chicken breasts in the bottom of the slow cooker. Pour the honey garlic mixture evenly over the chicken, coating each piece. (2 minutes)
  4. Cover and cook on low for about 3 hours until chicken is cooked through but still juicy and tender. Avoid opening the lid frequently. (3 hours)
  5. After 3 hours, scatter fresh broccoli florets on top of the chicken and sauce. Cover and cook for an additional 30-45 minutes until broccoli is bright green and tender but still crisp. (30-45 minutes)
  6. In a small bowl, combine cornstarch and cold water to make a slurry. Stir gently into the slow cooker without shredding the chicken. Cover and cook on high for 10-15 minutes until sauce thickens to a glossy consistency. (15 minutes)
  7. Taste the sauce and adjust seasoning if needed. Serve immediately.
