This slow cooker pulled pork is incredibly tender and flavorful, made with a smoky spice rub and tangy cooking liquid. Perfect for game day sliders, it’s a set-it-and-forget-it recipe that feeds a crowd with minimal effort.

  • 45 lbs pork shoulder (Boston butt)
  • 1 large yellow onion, sliced
  • 1 cup chicken broth, low-sodium
  • ¼ cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1216 slider buns (brioche or potato rolls)
  • BBQ sauce, for serving (optional)
  • Coleslaw, for serving (optional)
  • Pickles, for serving (optional)

Instructions

  1. Make the spice rub: In a small bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. Whisk together.
  2. Prep the pork: Pat the pork shoulder dry with paper towels. Rub the spice mixture all over the pork. Let sit for 15-20 minutes.
  3. Layer the slow cooker: Place sliced onion in an even layer on the bottom of a 6-7 quart slow cooker. In a small bowl, whisk together chicken broth, apple cider vinegar, and Worcestershire sauce.
  4. Start the cook: Place the seasoned pork on top of the onions. Pour the broth mixture around the pork, being careful not to wash off the rub. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until fork-tender.
  5. Shred the pork: Carefully transfer the cooked pork to a cutting board or large bowl. Let rest for 10-15 minutes. Using two forks, shred the meat. Discard any large pieces of fat or bone.
  6. Add the juices back: Pour about 1 cup of the cooking liquid over the shredded pork. Toss to coat. Add more liquid as desired. Mix in the caramelized onions from the slow cooker.
  7. Finish and serve: Taste and adjust seasoning. Let sit in warm liquid for 10-15 minutes. Pile onto toasted slider buns and top with coleslaw, BBQ sauce, and pickles if desired.

Notes

For extra flavor, sear the pork shoulder in a hot skillet with oil before adding to the slow cooker. Do not lift the lid during cooking. Skim excess fat from the cooking liquid before adding back to the shredded pork. To thicken the sauce, reduce the cooking liquid in a saucepan over medium-high heat for 5-10 minutes.
