Easy Sparkling Apple Cider Mimosa with Cinnamon Sugar Rim

A quick and easy fall mimosa made with sparkling apple cider, prosecco, and a cinnamon sugar rim. Perfect for brunch, Thanksgiving, or any autumn gathering.

Ingredients

  • Sparkling apple cider (or 1 part apple juice + 1 part club soda)
  • Prosecco or champagne (dry)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Lemon or apple wedge (for rim)
  • Ice cubes (optional)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Whisk until evenly mixed.
  2. Run a lemon or apple wedge around the rim of each glass to moisten it lightly.
  3. Turn the glass upside down and dip the moistened rim into the cinnamon sugar mixture, twisting gently for even coverage. Tap off excess.
  4. Add 2-3 ice cubes to each glass if desired.
  5. Fill each glass halfway with sparkling apple cider.
  6. Slowly top with prosecco or champagne, filling to about an inch from the rim. Pour down the side of the glass to reduce foam.
  7. Garnish with a thin apple slice or cinnamon stick if desired.
  8. Serve immediately.

Notes

Use a light touch with the lemon juice on the rim to prevent the sugar from sliding off. Serve immediately for best results. For a non-alcoholic version, skip the prosecco and use extra sparkling cider or non-alcoholic sparkling wine.
