Instructions

  1. Rinse and dry the apples. Using a sharp knife, slice them as thinly as possible—about 1/8-inch thick. Toss the slices in a small bowl with 1 teaspoon of lemon juice to prevent browning. This takes about 5 minutes.
  2. Place one large tortilla flat on your work surface. Evenly coat it with about 2 tablespoons of smooth sunbutter, leaving a small border around the edges.
  3. Arrange the lemon-tossed apple slices over the sunbutter in a single even layer. Drizzle lightly with honey and sprinkle a pinch of cinnamon if desired.
  4. Starting at one edge, carefully roll the tortilla tightly but gently to avoid squeezing out the filling, forming a neat spiral.
  5. Wrap the rolled tortilla in plastic wrap and chill in the fridge for 10-15 minutes to firm up.
  6. Slice the chilled roll into 1-inch pinwheels using a sharp knife. Expect about 8-10 pinwheels per tortilla.
