Instructions

  1. Mash the avocado in a medium bowl with a fork or potato masher until mostly smooth but still a bit chunky (about 1-2 minutes).
  2. Stir in lime juice, salt, black pepper, and optional Dijon mustard or smoked paprika. Mix well.
  3. Lay one flour tortilla flat on a cutting board. Spread an even layer of the avocado mixture over the tortilla, leaving about a 1/2 inch border around the edges.
  4. Arrange turkey slices evenly over the avocado spread, covering the tortilla but not piling too thickly (about 4 ounces per wrap).
  5. Sprinkle shredded cheddar cheese evenly over the turkey, then add fresh spinach leaves on top.
  6. Roll the tortilla tightly but gently into a log shape, tucking the edge under to create a neat seam (about 1-2 minutes).
  7. Wrap the rolled tortilla in plastic wrap and refrigerate for at least 15 minutes to firm up.
  8. Remove from fridge and slice the roll into 1-inch thick pinwheels using a sharp serrated knife, yielding about 6-8 pieces per wrap.
