Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375-400°F / 190-200°C).
  2. Rinse and halve 4 ripe peaches, removing the pits. In a mixing bowl, toss the peach halves with 1 teaspoon freshly squeezed lemon juice, 1/2 teaspoon ground cinnamon, and a pinch of salt.
  3. In a small saucepan over medium heat, melt 4 tablespoons of unsalted butter. Watch it closely as it foams and then begins to turn golden brown with a nutty aroma (about 3-5 minutes). Remove from heat before it turns too dark or smells burnt.
  4. Stir 2 tablespoons brown sugar and 1 teaspoon pure vanilla extract into the browned butter while it’s still warm, ensuring the sugar dissolves to create a luscious glaze.
  5. Place the peach halves cut side down on the hot grill. Grill for about 3-4 minutes without moving them, so they develop deep grill marks and caramelize.
  6. Flip carefully and grill the skin side for another 2-3 minutes until tender but still holding shape.
  7. Using a basting brush or spoon, generously coat the grilled peaches with the warm brown butter glaze. Let them sit on the grill for another minute to soak up the flavor.
  8. Serve immediately by placing the grilled peaches on serving plates and topping each with a scoop of creamy vanilla ice cream. Spoon any remaining brown butter glaze over the top.
