A bold and playful twist on classic fudge featuring creamy, buttery sweetness combined with the surprising crackle of Pop Rocks candy for a fun and nostalgic treat.

Ingredients

  • 2 cups granulated sugar (about 400g)
  • 1/2 cup (115g) unsalted butter, cut into pieces
  • 2/3 cup (160ml) evaporated milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups (about 340g) semisweet chocolate chips
  • 1/2 cup Pop Rocks candy (any flavor)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper or lightly grease it with butter or non-stick spray.
  2. In a medium heavy-bottomed saucepan, combine 2 cups granulated sugar, 1/2 cup butter, and 2/3 cup evaporated milk. Stir gently to combine.
  3. Place the saucepan over medium heat and bring the mixture to a rolling boil while stirring constantly for about 5 minutes, preventing burning. (Optional: use a candy thermometer to reach about 234°F / 112°C – soft ball stage.)
  4. Remove the pan from heat and immediately stir in 2 cups semisweet chocolate chips until fully melted and smooth.
  5. Add 1 teaspoon vanilla extract and 1/4 teaspoon salt, stirring to combine.
  6. Allow the fudge mixture to cool for about 5 minutes, stirring occasionally, until thick but still pourable.
  7. Gently fold in 1/2 cup Pop Rocks candy, being careful not to stir too vigorously to preserve the popping effect.
  8. Quickly pour the fudge mixture into the prepared pan and spread evenly with a spatula.
  9. Let the fudge cool at room temperature for about 2 hours until firm. For faster setting, refrigerate for 30-45 minutes.
  10. Once set, lift the fudge out using the parchment paper edges and cut into 1-inch squares. Serve immediately for best popping experience.

Notes

Add Pop Rocks last and fold gently to preserve the popping effect. Setting fudge at room temperature yields creamier texture; refrigeration speeds setting but may dull the pop. Avoid freezing fudge to maintain texture and popping candy effect. Use dairy-free butter, chocolate, and coconut cream for a vegan version. Experiment with different Pop Rocks flavors for variety.
