  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tbsp lemon juice/vinegar, let sit 5 minutes)
  • 2 teaspoons vanilla extract
  • Fresh strawberries, hulled and sliced
  • 1 cup (240ml) heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners or lightly grease it.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to beat the softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Add vanilla extract and mix until combined.
  5. Add the dry ingredients to the wet mixture in three additions, alternating with the buttermilk, starting and ending with the dry ingredients. Mix gently after each addition just until combined.
  6. Spoon the batter evenly into the cupcake liners, filling about ⅔ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Chill a mixing bowl and beaters in the fridge for 10 minutes. Pour heavy cream into the chilled bowl, add powdered sugar, and whip on medium-high speed until soft peaks form.
  10. Once cupcakes are cool, top each with whipped cream and a few slices of fresh strawberries. Optionally, sprinkle a tiny pinch of powdered sugar over the berries.

Notes

Do not overmix the batter to keep cupcakes light and tender. Use room temperature ingredients for best results. Chill mixing bowl and beaters before whipping cream to speed up the process. Slice strawberries just before serving to keep them fresh. For extra moistness, brush cupcakes with simple syrup before adding toppings.
