  • A pinch of red pepper flakes (optional)

Instructions

  1. Wash and thinly slice the cucumbers. Place slices in a colander, sprinkle with about 1 teaspoon salt, and toss to coat. Let sit for 10 minutes to draw out excess water.
  2. In a small bowl or jar, combine toasted sesame oil, grated fresh ginger, low-sodium soy sauce, rice vinegar, honey (or maple syrup), and minced garlic. Whisk or shake until smooth and well combined. Add red pepper flakes if desired.
  3. After 10 minutes, gently squeeze cucumbers in the colander to remove extra moisture. Pat dry with paper towels.
  4. Transfer cucumbers to a mixing bowl. Pour dressing over cucumbers, add sliced green onions, and toss gently until evenly coated.
  5. Sprinkle toasted sesame seeds and chopped cilantro or mint over the salad. Cover and refrigerate for at least 15 minutes to let flavors meld.
