A creamy, healthy twist on classic deviled eggs using avocado instead of mayonnaise, perfect for a quick snack or casual get-together.

  • 6 large eggs, hard boiled and peeled
  • 1 medium ripe avocado, mashed until smooth
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Smoked paprika, for garnish (optional)
  • Chopped fresh chives or parsley, for garnish

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat (about 8 minutes). Once boiling, turn off the heat, cover, and let sit for 10-12 minutes.
  2. Drain hot water and immediately transfer eggs to a bowl of ice water. Let chill for at least 5 minutes to stop cooking and ease peeling. Gently tap and peel the eggs under running water.
  3. Slice eggs in half lengthwise and carefully scoop out yolks into a mixing bowl. Add mashed avocado, Dijon mustard, and fresh lemon juice to the bowl with the yolks.
  4. Mash the yolks and avocado together using a fork or potato masher until smooth and creamy. Season with salt and freshly ground black pepper to taste. Adjust lemon juice or mustard if needed.
  5. Spoon or pipe the avocado mixture back into the egg white halves, mounding slightly over the edges.
  6. Sprinkle smoked paprika over the filled eggs and scatter chopped fresh chives or parsley on top. Keep refrigerated until ready to serve.

Notes

Use an ice bath to cool eggs for easier peeling. Slightly older eggs peel better. Lemon juice prevents avocado browning. Fill egg whites just before serving for best freshness. Optional garnishes include smoked paprika and fresh herbs. Variations include adding cayenne pepper, jalapeño, or Greek yogurt for extra flavor and texture.
