Ingredients

  • Cherry tomatoes (halved)
  • Cucumber slices (thin and crisp)
  • Baby carrots (washed and trimmed)
  • Seedless grapes
  • Fresh strawberries (hulled and halved)
  • Orange segments (peeled and sectioned)
  • Creamy cottage cheese (small-curd preferred)
  • Hummus (store-bought or homemade garlic hummus)
  • Whole-grain crackers (seeded preferred)
  • Roasted nuts (unsalted almonds or cashews)
  • Mild cheddar cubes or mozzarella balls (bite-sized)
  • Dried apricots or dates
  • Flaky sea salt
  • Freshly cracked black pepper
  • Lemon wedge (for squeezing over fruit or veggies)

Instructions

  1. Wash and rinse cherry tomatoes, grapes, strawberries, and cucumber thoroughly under cold water.
  2. Halve cherry tomatoes and strawberries, slice cucumbers thinly, and peel and section the oranges. Pat dry with a clean towel to prevent sogginess.
  3. Spoon out cottage cheese into a small container and lightly season with cracked black pepper and a pinch of sea salt.
  4. If using hummus, stir to smooth consistency and place in a separate container. Keep dips chilled until packing.
  5. Measure out whole-grain crackers and nuts into small compartments or bowls, avoiding overpacking to prevent crushing.
  6. Arrange veggies, fruits, cheese cubes, and dips neatly into separate sections of the snack box.
  7. Place lemon wedge alongside fresh fruit for squeezing just before eating to keep it fresh.
  8. Add dried apricots or dates in a small corner for a sweet finish.
  9. Add a small napkin or wet wipe for easy clean-up.
  10. If heading to the beach, place a reusable ice pack underneath or alongside the snack box to keep everything cool and crisp.
