  • 1 cup (240 ml) heavy cream, chilled
  • 2 tablespoons honey (mild-flavored like clover or wildflower)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon lemon zest
  • Optional garnish: fresh mint leaves or toasted almonds

Instructions

  1. Chill your mixing bowl and whisk or beaters in the fridge for about 10 minutes.
  2. Gently rinse 2 cups (300 grams) of fresh black raspberries under cool water. Drain well and pat dry with a paper towel.
  3. Pour 1 cup (240 ml) of chilled heavy cream into the cold bowl. Start whisking by hand or with an electric mixer on medium speed.
  4. When the cream starts to thicken, add 2 tablespoons honey, 1 teaspoon vanilla extract, and 1 teaspoon lemon zest.
  5. Continue whisking until soft peaks form—when you lift the whisk, the cream should hold a gentle peak that slightly droops. Avoid overwhipping.
  6. Add the prepared black raspberries to the whipped cream. Using a rubber spatula, gently fold them in with slow, deliberate strokes to keep the berries whole and juicy.
  7. Spoon the mixture into serving glasses or bowls. Chill for at least 15 minutes to let the flavors meld and the cream firm up a bit.
  8. Just before serving, top with fresh mint leaves or a sprinkle of toasted almonds.

Chill your mixing bowl and whisk before whipping cream to help it whip faster and hold better. Fold berries gently to keep them whole and juicy. If cream is too runny, add a tiny pinch of powdered sugar while whipping next time to stabilize it. For dairy-free version, substitute heavy cream with coconut or cashew cream and honey with maple syrup.
