A quick and easy fresh Caprese bruschetta featuring ripe tomatoes, fresh mozzarella, basil, and a sweet balsamic glaze on toasted bread. Perfect for a light snack or appetizer that feels fresh and elegant.

Ingredients

  • Baguette or Italian bread, sliced about ½ inch thick
  • Extra virgin olive oil, for brushing and drizzling
  • Fresh tomatoes, diced (preferably Roma or cherry tomatoes)
  • Fresh mozzarella, torn or sliced into bite-sized pieces
  • Fresh basil leaves, torn or thinly sliced
  • Garlic clove, peeled and halved
  • Sweet balsamic glaze, store-bought or homemade
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F or heat a skillet over medium heat.
  2. Slice the baguette into ½-inch thick slices, aiming for uniformity.
  3. Lightly brush each bread slice on both sides with extra virgin olive oil.
  4. Toast the bread slices on a baking sheet or skillet for 4–6 minutes per side until golden and crisp.
  5. While still warm, rub the cut side of the garlic clove over each toasted slice to infuse garlic aroma.
  6. In a bowl, combine diced tomatoes, torn basil leaves, a pinch of salt, and freshly cracked black pepper. Toss gently and let sit for 5 minutes.
  7. Spoon the tomato mixture generously onto each toasted bread slice.
  8. Top each slice with pieces of fresh mozzarella.
  9. Drizzle sweet balsamic glaze over each bruschetta.
  10. Serve immediately while the bread is crunchy and the cheese slightly melty.

Notes

Use day-old bread for better crunch. Rub garlic on warm bread for subtle flavor. For melty mozzarella, broil assembled bruschetta 1-2 minutes before drizzling glaze. Drain excess tomato liquid to avoid soggy bread. Can substitute gluten-free bread and dairy-free cheese for dietary needs.
