  • 12 slices white sandwich bread, crusts removed
  • 1 English cucumber, thinly sliced (about 1/8 inch thick)
  • 8 ounces (225g) cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh lemon juice
  • Pinch of garlic powder
  • Salt and freshly ground black pepper, to taste
  • Optional: thin layer of softened butter or olive oil for spreading on bread

Instructions

  1. In a medium bowl, combine softened cream cheese with dill, chives, parsley, lemon juice, garlic powder, salt, and pepper. Mix until smooth and creamy, about 5 minutes.
  2. Using a serrated knife or mandoline, slice the cucumber into very thin rounds (about 1/8 inch thick). Lay slices on paper towels and pat dry to remove excess moisture, about 5-7 minutes.
  3. Trim crusts from bread slices. Optionally, spread a thin layer of softened butter or olive oil on each slice to prevent sogginess, about 3-4 minutes.
  4. Spread about 1 tablespoon of herb cream cheese evenly over one side of each bread slice.
  5. Arrange cucumber slices in a single overlapping layer on top of the cream cheese.
  6. Top with another bread slice, cream cheese side down, to form sandwiches.
  7. Cut each sandwich into three or four finger-sized rectangles or triangles.
  8. Place sandwiches on a platter, cover with plastic wrap, and chill in the refrigerator for at least 15 minutes before serving.

Notes

Pat cucumber slices dry to prevent soggy sandwiches. Chilling sandwiches before serving helps flavors meld and bread firm up. Use a serrated knife for thin, even slices. Optional butter or olive oil on bread acts as a moisture barrier. Assemble up to 4 hours ahead but not longer to avoid sogginess.
