  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime
  • 1 ripe mango, peeled and diced
  • ½ red bell pepper, finely chopped
  • ¼ small red onion, finely diced
  • 1 small jalapeño, seeded and minced (optional)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • 1 head butter lettuce or Boston lettuce, leaves separated and washed
  • Lime wedges, for serving

Instructions

  1. Marinate the shrimp: In a medium bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, pepper, and lime juice. Toss the shrimp in the mixture, coating evenly. Let sit for 10 minutes.
  2. Prepare the mango salsa: In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), and cilantro. Squeeze fresh lime juice over the mixture, season with salt, and gently toss to combine.
  3. Preheat the grill or grill pan over medium-high heat for 5 minutes. If using a grill, brush grates lightly with oil to prevent sticking.
  4. Grill the shrimp: Place shrimp on the hot grill or pan in a single layer. Cook for about 2-3 minutes per side until opaque and slightly charred, about 5-7 minutes total.
  5. Prepare lettuce wraps: Separate lettuce leaves and pat dry.
  6. Assemble the wraps: Place 3-4 grilled shrimp in each lettuce leaf, top generously with mango salsa, and serve with lime wedges.

Notes

Do not marinate shrimp for longer than 10 minutes to avoid mushy texture. Avoid overcrowding the grill to ensure proper searing. Salsa can be made ahead and chilled; add lime juice just before serving. Store shrimp and salsa separately if making ahead.
