  • 12 jalapeños, finely chopped (seeded for less heat or whole for spicier)
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 teaspoon honey or agave
  • Salt to taste
  • Optional: 1 small clove garlic, minced

Instructions

  1. Rinse and peel the peaches. Optionally blanch in boiling water then ice water to ease peeling. Dice into roughly 1/2-inch pieces (about 2 cups).
  2. Slice jalapeños lengthwise, remove seeds and membranes if less heat is desired, then finely chop. Start with one pepper and adjust to taste.
  3. Finely dice 1/4 cup red onion and roughly chop 1/4 cup fresh cilantro.
  4. In a mixing bowl, gently toss together peaches, jalapeños, onion, and cilantro.
  5. Squeeze juice from 2 fresh limes (about 3 tablespoons) over the mixture. Add 1 teaspoon honey and a pinch of salt. Stir carefully to blend flavors while keeping chunks intact.
  6. Taste and adjust seasoning with more salt, lime juice, or jalapeño as desired. Add a little more honey if too spicy.
  7. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
