  • 2 medium ripe peaches, sliced thinly
  • 1 cup (240 ml) Greek yogurt, full-fat or low-fat, plain or vanilla-flavored
  • 1 to 2 tablespoons honey (wildflower honey recommended)
  • 1/2 cup (about 50 g) homemade granola (rolled oats, sliced almonds, chopped walnuts, pinch of cinnamon, drizzle of maple syrup or honey)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice (optional)
  • 1 tablespoon chia seeds or flaxseeds (optional)

Instructions

  1. Rinse and slice 2 ripe peaches into thin wedges. Toss gently with 1 teaspoon of fresh lemon juice and 1 tablespoon honey in a mixing bowl. Set aside for 5 minutes.
  2. Make the granola (if homemade): Preheat oven to 325°F (160°C). Combine 1 cup rolled oats, 1/4 cup sliced almonds, 1/4 cup chopped walnuts, and a pinch of cinnamon. Drizzle 2 tablespoons maple syrup or honey and toss. Spread on a baking sheet and bake for 15-20 minutes, stirring halfway through. Let cool.
  3. Mix the yogurt: Whisk 1 cup Greek yogurt with 1/2 teaspoon vanilla extract and 1 tablespoon honey until smooth. Stir in chia or flax seeds if using.
  4. Assemble the parfait: Spoon yogurt into glass or bowl, add a layer of peach slices, then granola. Repeat layers, finishing with granola on top.
  5. Serve immediately for maximum crunch or chill in the fridge for 15-20 minutes to soften peaches and meld flavors.

Notes

To keep granola crunchy, add it last and avoid mixing directly with yogurt until serving. Peaches can be substituted with nectarines or berries. For dairy-free, use coconut or almond milk yogurt. Store components separately for freshness. Reheat granola briefly to refresh crispness.
