A quick and easy light summer snack combining juicy watermelon, creamy feta, and fresh mint on skewers for a refreshing and satisfying bite.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Good-quality block feta cheese, cut into 1-inch cubes
  • Fresh mint leaves
  • Extra virgin olive oil (optional, for drizzling)
  • Balsamic glaze (optional, for drizzling)
  • Wooden skewers, about 6 inches long

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes, aiming for uniform pieces.
  2. Slice the feta block into 1-inch cubes, taking care not to crumble it too much.
  3. Gently pluck fresh mint leaves from the stems; use whole leaves or fold larger ones in half.
  4. Thread one cube of watermelon, one cube of feta, and a fresh mint leaf onto each skewer. Repeat once or twice more depending on skewer length.
  5. Arrange the skewers on a serving platter and optionally drizzle with extra virgin olive oil or balsamic glaze. Add cracked black pepper if desired.
  6. Serve immediately for best freshness. If prepping ahead, cover and refrigerate for up to 2 hours.

Notes

Use firm, ripe seedless watermelon for best texture. Keep feta chilled until use to prevent crumbling. Assemble skewers close to serving time to keep watermelon crisp and mint fresh. Optional drizzles of olive oil or balsamic glaze add richness and tang. For a vegan version, substitute feta with marinated tofu or plant-based cheese.
