  • 1/2 cup crumbled feta cheese (about 75 g)
  • 1/4 cup fresh mint leaves, finely chopped (about 10 g)
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • Optional: freshly ground black pepper or flaky sea salt to taste

Instructions

  1. Slice the watermelon into 1/2-inch thick rounds. Cut each round into 3-4 inch wide wedges, like pizza slices.
  2. In a small bowl, mix 2 tablespoons honey with 1 tablespoon fresh lime juice. Stir in the finely chopped mint leaves to create the drizzle.
  3. Arrange the watermelon wedges on a serving platter.
  4. Crumble 1/2 cup feta cheese evenly over the watermelon slices.
  5. Drizzle the honey-lime-mint mixture over each watermelon slice.
  6. Optionally, sprinkle freshly cracked black pepper or flaky sea salt on top.
  7. Serve immediately for best texture and flavor.

Notes

Use a sharp knife to avoid crushing the watermelon. Assemble just before serving to keep watermelon fresh and prevent sogginess. Optionally chill watermelon rounds before assembling for extra refreshment. Soften dry feta by microwaving for 10 seconds if desired.
