  • 4 tablespoons unsalted butter, softened
  • 4 large cloves garlic, minced
  • 1 large lemon, zested and juiced
  • ¼ cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • ¼ cup extra virgin olive oil
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet or oven-safe skillet with parchment paper.
  2. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  3. In a small bowl, combine softened butter, minced garlic, lemon zest (from half the lemon), and red pepper flakes (if using). Mash with a fork until well combined.
  4. In a medium bowl or mason jar, combine lemon juice (from the whole lemon), parsley, and dill. Slowly drizzle in olive oil while whisking or shake vigorously until emulsified. Season with salt and pepper. Set aside.
  5. Place seasoned salmon fillets on the prepared baking sheet, skin-side down. Divide garlic butter mixture evenly among fillets, spreading on top.
  6. Bake for 12-15 minutes, until salmon flakes easily with a fork and internal temperature reaches 125°F (52°C) for medium-rare or 130-135°F (54-57°C) for medium. Optionally, broil for the last 1-2 minutes for a golden top.
  7. Let salmon rest for 2 minutes. Spoon melted garlic butter from the pan over the fillets.
  8. Drizzle lemon herb sauce generously over salmon just before serving.

Notes

For best results, let salmon sit at room temperature for 10-15 minutes before seasoning. Pat fillets dry to ensure a good crust. Use an instant-read thermometer to avoid overcooking. The lemon herb sauce can be made ahead and stored in the refrigerator for up to 3 days.
