  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 2 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon honey (or maple syrup as a substitute)
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prep your marinade: In a mixing bowl, whisk together olive oil, minced garlic, fresh lemon juice, honey, dried oregano, salt, and pepper.
  2. Marinate the salmon: Place salmon fillets skin-side down in a shallow dish and pour marinade over them. Flip to coat evenly. Let sit at room temperature for 10 minutes. Do not marinate longer than 20 minutes.
  3. Preheat your grill or grill pan to medium-high heat (around 400°F / 204°C). Clean and oil the grates to prevent sticking.
  4. Grill the salmon: Place fillets skin-side down on the grill. Grill for 4-5 minutes without moving. Flip carefully and grill for another 3-5 minutes until salmon flakes easily with a fork but remains moist.
  5. Rest and serve: Remove salmon from grill and let rest for 2 minutes. Serve with a wedge of lemon and fresh herbs if desired.

Notes

Do not marinate salmon longer than 20 minutes to avoid ‘cooking’ the fish with lemon juice. Use fresh lemon juice for best flavor. Oil the grill grates well to prevent sticking. Let salmon rest after grilling to keep it juicy. Flip salmon only once to maintain skin crispiness.
