This bright and satisfying pasta salad combines al dente pasta, creamy chickpeas, and fresh vegetables with a tangy lemon vinaigrette. It’s a quick, meal-prep-friendly dish that’s perfect for lunches, picnics, and potlucks.

Ingredients

Scale
  • 8 oz short pasta (rotini or fusilli)
  • 15 oz canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium English cucumber, diced
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled (optional, omit for vegan)
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions, but subtract 1 minute from the recommended time for al dente. Drain and rinse under cold water to stop cooking. Set aside to cool completely.
  2. Make the lemon vinaigrette: In a small bowl or mason jar, combine olive oil, lemon juice, Dijon mustard, honey (or maple syrup), minced garlic, and a pinch of salt and pepper. Whisk vigorously or shake until emulsified and slightly thickened. Taste and adjust seasoning.
  3. Prep the veggies: Halve the cherry tomatoes, dice the cucumber and bell pepper, and finely dice the red onion. If desired, soak the diced red onion in cold water for 10 minutes to mellow the bite, then drain. Chop the parsley.
  4. Rinse the chickpeas: Drain and rinse the chickpeas thoroughly under cold water. Let them drain well, then pat dry with a clean kitchen towel to help the dressing stick.
  5. Combine everything: In a large mixing bowl, add the cooled pasta, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley. If using feta, add it now. Pour the lemon vinaigrette over the top.
  6. Toss gently: Use two large spoons or clean hands to toss everything together until the dressing coats every ingredient evenly. Be gentle to avoid breaking the pasta.
  7. Let it rest: Allow the salad to sit for at least 10 minutes before serving (30 minutes is even better) to let the flavors meld.
  8. Serve or store: Give it one last toss, taste for seasoning, and add a final squeeze of lemon if needed. Serve at room temperature or cold.

Notes

Don’t skip the resting step—the flavors meld and improve over time. For best results, make the salad a day ahead. If the salad seems dry after a few days, add a splash of lemon juice or olive oil. This salad is meant to be served cold or at room temperature; do not reheat.
