  • 2 cups (about 10 oz) cooked chicken breast, shredded or chopped (poached or rotisserie preferred)
  • 1 cup (8 fl oz) plain Greek yogurt, full-fat or non-fat
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 stalk celery, finely chopped
  • 2 tbsp red onion, finely diced
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp extra virgin olive oil (optional)

Instructions

  1. If starting from raw chicken breasts, poach them gently in simmering water for about 15-18 minutes until cooked through (internal temperature 165°F). Let cool, then shred or chop into bite-sized pieces. Alternatively, use leftover rotisserie chicken.
  2. Finely chop 2 tablespoons each of fresh dill and parsley, and 1 tablespoon of chives. Dice 1 stalk of celery and 2 tablespoons of red onion finely.
  3. In a medium mixing bowl, combine 1 cup plain Greek yogurt, 1 tablespoon freshly squeezed lemon juice, 1/4 teaspoon garlic powder, and a pinch of salt and freshly ground black pepper. Stir until smooth and creamy. Optionally, drizzle in 1 tablespoon extra virgin olive oil for silkiness.
  4. Add the shredded chicken, chopped herbs, celery, and onion into the bowl with the yogurt dressing. Gently fold everything together using a spatula or spoon until evenly coated, being careful not to mash the chicken.
  5. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  6. Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld and the salad to firm up slightly.
  7. Serve chilled or at room temperature over fresh greens, whole grain bread, or in pita pockets. Garnish with extra herbs or a lemon wedge if desired.

Notes

Use room temperature yogurt for easier mixing. Fold ingredients gently to keep chicken texture intact. Fresh herbs are preferred over dried for best flavor. Chill salad for at least 30 minutes before serving to enhance flavor. Salad keeps well refrigerated for up to 3 days; stir before serving. If too thick after chilling, add a splash of water or lemon juice to loosen.
