These healthy overnight protein breakfast cookies are soft, chewy, and packed with protein. Made with no added sugar, they are a perfect grab-and-go breakfast that keeps you full until lunch.

  • 2 cups (180g) rolled oats
  • 3 medium ripe bananas, mashed (about 1.5 cups)
  • 2 large eggs
  • 1/2 cup (130g) creamy peanut butter (natural, no added sugar)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/4 cup dark chocolate chips (sugar-free or 85% cacao), 1/4 cup chopped walnuts, 1/4 cup dried unsweetened cranberries, or 2 tablespoons chia seeds

Instructions

  1. Mash the bananas: In a large mixing bowl, mash the three ripe bananas until mostly smooth. A few small lumps are fine.
  2. Add the wet ingredients: Add the two eggs and peanut butter to the mashed bananas. Stir until fully combined.
  3. Mix the dry ingredients: In a separate small bowl, whisk together the rolled oats, protein powder, cinnamon, baking powder, and salt.
  4. Combine wet and dry: Pour the dry ingredients into the wet ingredients. Fold together gently until no dry pockets remain. The dough will be thick and sticky.
  5. Add mix-ins (optional): Fold in chocolate chips, nuts, or dried fruit if using.
  6. Cover and refrigerate overnight: Cover the bowl tightly with plastic wrap or a lid and refrigerate for 8-12 hours.
  7. Preheat and prep: The next morning, preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  8. Scoop the dough: Use a cookie scoop or spoon to portion out about 2 tablespoons of dough per cookie. Roll into balls and place on the prepared baking sheet, leaving 2 inches of space. Gently flatten each ball slightly.
  9. Bake: Bake for 12-15 minutes, until edges are golden brown and tops look set. Do not overbake.
  10. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not skip the overnight rest—it allows the oats to absorb moisture for a soft, tender texture. Use very ripe bananas for natural sweetness. If dough is too dry, add a tablespoon of milk at a time. If too wet, add a tablespoon of oats. Cookies are fragile when warm; let them cool completely before handling.
