  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons toasted sesame seeds
  • 2 stalks green onions, thinly sliced (optional)
  • 1 tablespoon neutral oil (canola or avocado oil)

Instructions

  1. Prepare the glaze: In a small saucepan over low heat, combine honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir gently until the honey melts and the mixture is warm and slightly thickened, about 3-4 minutes. Taste and adjust heat by adding more sriracha if desired. Remove from heat and set aside.
  2. Toast the sesame seeds: Place sesame seeds in a dry skillet over medium heat. Stir frequently for 2-3 minutes, until golden brown and fragrant. Transfer to a small bowl to cool.
  3. Prep the salmon: Pat the salmon fillets dry with paper towels. Season lightly with salt and pepper on both sides. Let rest at room temperature for 10 minutes.
  4. Sear the salmon: Heat neutral oil in a non-stick or cast iron skillet over medium-high heat. Add salmon fillets skin-side down. Press down gently with a spatula for 10 seconds to prevent curling. Cook for 4-5 minutes without moving, until skin is crisp and releases easily.
  5. Flip and glaze: Carefully flip the salmon and immediately brush the top with the honey sriracha glaze. Cook for another 3-4 minutes, brushing glaze once more midway, until salmon is opaque and flakes easily with a fork. Internal temperature should reach 125°F (52°C) for medium doneness.
  6. Finish with sesame crunch: Transfer salmon to serving plates and sprinkle generously with toasted sesame seeds and sliced green onions, if using.

Notes

If glaze thickens too much while resting, gently warm it again on low before brushing. Do not overcrowd the pan when cooking salmon to ensure proper searing. For gluten-free, substitute soy sauce with tamari or coconut aminos. For less heat, reduce sriracha or add mild chili paste. Toast sesame seeds carefully to avoid burning.
