These Juicy Baked Pork Chops with Garlic Herb Butter are the perfect weeknight dinner—quick, easy, and unbelievably tender. A quick sear locks in moisture, and the garlic herb butter melts over the chops as they bake, creating a rich, flavorful sauce.

Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon salt
  • 1 teaspoon lemon zest (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Make the garlic herb butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, parsley, and ¼ teaspoon of salt. Mix well with a fork. If using lemon zest, add it here. Set aside.
  3. Prep the pork chops: Pat the pork chops dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, and paprika.
  4. Sear the chops: Heat the olive oil in an oven-safe skillet over medium-high heat. When the oil is shimmering, carefully place the pork chops in the pan. Sear undisturbed for 3-4 minutes until deep golden brown. Flip and sear the other side for another 2-3 minutes.
  5. Add the butter: Turn off the heat. Dollop the garlic herb butter over the top of each pork chop.
  6. Bake: Transfer the skillet to the preheated oven. Bake for 10-15 minutes, depending on thickness, until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer inserted into the thickest part away from the bone.
  7. Rest: Remove the skillet from the oven and transfer the pork chops to a cutting board. Let them rest for 5 minutes.
  8. Spoon the pan sauce over the chops before serving.

Notes

For thinner chops (less than 1 inch), reduce baking time to 7-10 minutes. Let the pork chops come to room temperature for about 20 minutes before cooking for more even cooking. Don’t skip the rest—it’s crucial for juiciness. If you don’t have an oven-safe skillet, sear in a regular pan and transfer to a preheated baking dish.
