Light & Crispy Maple Glazed Delicata Squash Rings

Crispy, caramelized delicata squash rings with a sweet maple glaze, perfect as an easy fall side dish. Ready in 35 minutes with simple ingredients.

  • 2 medium delicata squash (about 1.5 lbs total)
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 3 tablespoons pure maple syrup
  • ½ teaspoon sea salt, plus more for finishing
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cinnamon (optional)
  • 1 tablespoon fresh thyme, chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a half-sheet pan with parchment paper.
  2. Wash delicata squash. Trim off stem and bottom tip. Slice crosswise into ½-inch thick rings. Scoop out seeds and stringy pulp from center of each ring.
  3. In a medium mixing bowl, combine squash rings with olive oil and cornstarch. Toss with hands until evenly coated.
  4. Arrange rings in a single layer on prepared baking sheet, not overlapping.
  5. Roast for 10 minutes until bottoms begin to brown.
  6. In a small bowl, whisk together maple syrup, ½ teaspoon sea salt, black pepper, and cinnamon (if using).
  7. After 10 minutes, remove baking sheet. Brush tops of rings with maple glaze, then flip each ring. Brush other side with glaze. Reserve about one-third of glaze for final drizzle.
  8. Return to oven and roast for another 8-10 minutes until edges are deep golden brown and crispy.
  9. Remove from oven. Drizzle remaining glaze over hot rings. Sprinkle with flaky sea salt and fresh thyme (if using). Let cool on baking sheet for 2-3 minutes. Serve warm.

Notes

Don’t skip the cornstarch—it creates crispy edges. Apply maple glaze in two stages to prevent burning. Slice rings evenly (½ inch) for consistent cooking. Let rings rest 2-3 minutes after roasting for glaze to set. For air fryer: cook at 375°F for 8 minutes, flip and brush with glaze, then cook 4-5 more minutes.
