  • 8 oz cream cheese (225 g), softened
  • ½ cup unsalted butter (115 g), softened
  • 4 cups powdered sugar (480 g), sifted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch cake pans or line with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and vinegar until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula until no streaks of flour remain. Do not overmix.
  5. Divide the batter evenly among the three prepared pans.
  6. Bake for 25-30 minutes, rotating pans halfway through. Cakes are done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let cakes cool in pans for 10 minutes, then transfer to cooling racks to cool completely.
  8. To make the frosting, beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, vanilla extract, and salt, whipping until fluffy (3-4 minutes).
  9. Assemble the cake by placing one layer on a serving plate, spreading about ¾ cup frosting evenly over the top. Repeat with the second and third layers, then frost the top and sides.
  10. Refrigerate the assembled cake for at least 30 minutes before serving to let the frosting set.
