A quick and easy appetizer featuring a whole wheel of brie wrapped in flaky puff pastry with sweet fig jam and fresh thyme, baked to golden perfection. Perfect for entertaining or cozy nights in.

  • 1 whole wheel brie cheese (8 oz / 225 g), room temperature
  • 1 sheet puff pastry (8x8 inches / 20x20 cm), thawed but cold
  • 3 tablespoons fig jam
  • 1 teaspoon fresh thyme leaves
  • 1 large egg, beaten (for egg wash)
  • Optional: handful chopped walnuts or pecans
  • Optional: drizzle of honey after baking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the thawed puff pastry sheet to smooth any creases. Trim edges if needed to get a neat square about 9×9 inches (23×23 cm).
  3. Place the brie wheel in the center of the pastry. Using a small knife, gently score the top rind of the brie in a crisscross pattern.
  4. Spread the fig jam evenly over the top of the brie.
  5. Sprinkle fresh thyme leaves over the jam.
  6. Wrap the brie with puff pastry: fold the pastry up and over the cheese, pinching edges to seal completely. Trim any excess pastry if needed and use scraps to decorate the top if desired.
  7. Brush the entire pastry surface with beaten egg.
  8. Place the wrapped brie on a baking sheet lined with parchment paper or a silicone mat.
  9. Bake for 20-25 minutes, or until the pastry is puffed and golden brown. Check after 18 minutes to avoid burning.
  10. Remove from oven and let rest for 5 minutes.
  11. Serve warm with sliced baguette, crackers, or apple slices.

Notes

Thaw puff pastry overnight in the fridge and let sit at room temperature for 10 minutes before shaping. Avoid overfilling with jam to prevent soggy pastry. Brush egg wash lightly and evenly for a golden crust. Tent with foil if pastry browns too quickly. Can be assembled ahead and refrigerated; brush egg wash just before baking.
