  • 1 cup whole-milk ricotta cheese
  • 23 tablespoons honey, preferably mild floral variety

  • 1 medium baguette, sliced into ½-inch thick pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and pat dry figs. Cut each fig in half lengthwise. Place cut side up on the baking sheet.
  3. Drizzle about 1 ½ tablespoons honey evenly over the figs. Roast for 15-20 minutes until tender and caramelized but still holding shape.
  4. While figs roast, slice baguette into ½-inch thick pieces. Brush both sides lightly with olive oil.
  5. Toast baguette slices in the oven for 8-10 minutes until golden and crisp, flipping halfway through.
  6. In a mixing bowl, combine ricotta, lemon zest, 1 tablespoon honey, and a pinch of salt. Whip with an electric mixer or whisk for 2-3 minutes until light and airy.
  7. Spread a generous spoonful of whipped ricotta on each toasted baguette slice.
  8. Top with one or two halves of roasted figs. Drizzle with remaining honey and sprinkle fresh thyme leaves if using.
  9. Serve immediately for best texture contrast.
