A quick and easy apple crisp with a crunchy oat pecan topping, perfect for last-minute gatherings. Ready in under an hour with simple pantry ingredients.

Ingredients

Scale
  • 4–5 medium apples (about 2 pounds or 900g), a mix of sweet and tart varieties like Honeycrisp and Granny Smith
  • 3 tablespoons granulated sugar (40g)
  • 1 tablespoon brown sugar (15g)
  • 1 teaspoon ground cinnamon (3g)
  • 1 tablespoon all-purpose flour (8g)
  • 1 tablespoon lemon juice (15ml)
  • 1 cup rolled oats (90g)
  • 1/2 cup all-purpose flour (60g)
  • 1/2 cup chopped pecans (60g)
  • 1/2 cup packed brown sugar (110g)
  • 1/4 teaspoon salt (1g)
  • 1/2 teaspoon ground cinnamon (1.5g)
  • 6 tablespoons cold unsalted butter (85g), cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the middle of the oven.
  2. Prepare the apples: Wash, quarter, core, and slice each quarter into 3-4 chunks (about 1/2 inch thick). Place in a medium bowl.
  3. Season the apples: Add granulated sugar, brown sugar, cinnamon, flour, and lemon juice. Toss until every piece is coated. Let sit while making the topping.
  4. Make the crunchy topping: In a large bowl, combine rolled oats, flour, chopped pecans, brown sugar, salt, and cinnamon. Add cold butter cubes. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture looks like wet sand with some pea-sized butter pieces remaining.
  5. Assemble the crisp: Pour the seasoned apples into an 8×8 inch baking dish and spread into an even layer. Sprinkle the topping evenly over the apples, dropping clumps to create irregular crunchy bits. Cover all the apples.
  6. Bake: Place the dish on the middle rack and bake for 35-40 minutes. After 20 minutes, check the topping; if browning too quickly, tent loosely with foil. The crisp is done when the topping is deep golden brown and the filling is bubbling around the edges.
  7. Cool slightly before serving: Let the crisp rest on a wire rack for at least 10 minutes before serving. This allows the filling to set.

Notes

Place the baking dish on a rimmed baking sheet to catch any bubbling filling. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For a dairy-free version, use cold coconut oil or plant-based butter. The crisp tastes even better the next day as flavors meld.
